Pomace oil is extracted from the olive paste remaining after the first cold-press, using solvent extraction followed by careful refining. The result is a clean, neutral oil with a very high smoke point — making it the go-to choice for deep frying, baking and high-heat cooking. A small percentage of virgin olive oil is blended back in to retain the characteristic olive notes and deliver the health benefits typical of olive oil.
