Our Extra Virgin Olive Oil begins with hand-picked Koroneiki olives harvested at peak ripeness every November. Within 24 hours of picking, the olives are cold-pressed — no heat, no chemicals — to preserve the full spectrum of polyphenols, antioxidants and natural flavour compounds. The result is an oil of exceptional quality: deeply green-golden, with a robust peppery finish and a fresh grassy aroma that speaks of the Mediterranean grove.
